SO much has happened since my last blog. &lt;/p&gt;
&lt;p&gt;although i haven&amp;#8217;t been on tumblr i have been very busy. i started going to a bootcamp 3 days a week - an am planning continuing! i am so motivated and so happy. &lt;/p&gt;
&lt;p&gt;i have my half marathon coming up. sunday, september 25th. i haven&amp;#8217;t been running as much as i would have liked. i really wanted to train well and improve on my time from my first half but what can you do? &lt;/p&gt;
&lt;p&gt;i am hoping that i will surprise myself because i&amp;#8217;ve already seen some drastic changes in my strength from all the bootcamp classes. &lt;/p&gt;
&lt;p&gt;i feel like i&amp;#8217;ve finally got some serious direction in my life and it&amp;#8217;s not difficult to be &amp;#8220;good&amp;#8221;. i&amp;#8217;ve been eating well and working out a lot! i haven&amp;#8217;t seen any significant weight-loss. but i know that it will come. i feel tighter and that&amp;#8217;s what really matters.&lt;/p&gt;
&lt;p&gt;AND at my bootcamp i have met some absolutely amazing people. one being a physical therapist. there is SO much i can do. i can&amp;#8217;t get involved the healthcare/nutritional/fitness industries if i want to. yes it takes money. but if i love what i do - that is a good investment. game on.&lt;/p&gt;

&lt;p&gt;then.&lt;/p&gt;
&lt;p&gt;september 25th is my 1/2 marathon. yay! i&amp;#8217;m super excited.&lt;/p&gt;
&lt;p&gt;it&amp;#8217;s kind of funny though. i feel like i haven&amp;#8217;t been eating quite as well as i was while i wasn&amp;#8217;t running. why is that? luckily it&amp;#8217;s the weekend. and i actually do better on the weekends because i&amp;#8217;m able to be active and go out. and not think about food all the time. which i suppose isn&amp;#8217;t bad. as long as i can control myself. ha ha.&lt;/p&gt;
&lt;p&gt;sunday is my grocery shopping day. and i&amp;#8217;m going to focus on raw food. which i have been doing. i just went out too much this week - work lunches. so no lunches out next week. i&amp;#8217;m going all raw. except. yogurt and cottage cheese. mmm&amp;#8230; on sunday when i make my gorcery list. i&amp;#8217;m also going to make a &amp;#8220;food&amp;#8221; list. all rood food is acceptable. plus specific exceptions. and then i am going to stick to it.&lt;/p&gt;

&lt;p&gt;however.&lt;/p&gt;
&lt;p&gt;i can&amp;#8217;t change what i haven&amp;#8217;t done up to this point. all i can do is move forward and get it done!&lt;/p&gt;
&lt;p&gt;today was a 60% good day and 40% needs improvement. i did well at work. oatmeal for breakfast, tasty fiesta salad from chipotle, banana for snack (it was suppose to be a pre-running snack. oops.)&lt;/p&gt;
&lt;p&gt;then i got home. and instead of drinking water - because i was &amp;#8220;starving&amp;#8221;. i decided to mow down on some peanut butter puffins. if you haven&amp;#8217;t had those. you should at least try them. but i do warn you, they are amazingly delicious and highly addicting. not exactly part of a raw diet. so. those are GONE. just need to cut them out.&lt;/p&gt;
&lt;p&gt;so i had WAY too many of those. like we&amp;#8217;re talking just about half the box. ugh. bad. moving forward&amp;#8230;&lt;/p&gt;
&lt;p&gt;i made zucchini noodles with my new julienne/spirooli slicer - check out this &lt;a title="youtube slicer demo" target="_blank" href="http://www.youtube.com/watch?v=6WFHqKTI9Lo"&gt;youtube demo&lt;/a&gt;. the guy doing the demonstration is a crack up. but yes. AMAZING. probably one of the best purchases i&amp;#8217;ve made in awhile. and i also made a delicious &lt;a title="raw no oil pesto" target="_blank" href="http://goneraw.com/recipe/no-oil-pesto"&gt;raw no oil pesto&lt;/a&gt;. thanks to goneraw.com.&lt;/p&gt;

&lt;p&gt;so. not the best day. but not my worst day. goal is to start fresh tomorrow. i&amp;#8217;ve got leftovers ready to go and i added some cherry tomatoes. strawberries for a snack. another banana. almonds and dried cranberries. probably oatmeal again for breakfast. i am set up for success. now i just need to come home. push through my mid-day low (i get SO tired on my way from work - traffic! hate it.) and then i&amp;#8217;m exhausted by the time i get home.&lt;/p&gt;
&lt;p&gt;i&amp;#8217;m going to eat my almonds and dried cranberries about a half hour before i leave for work. then get home and RUN! like walk in the door. change. and go! i feel like i&amp;#8217;m going to have a great day tomorrow. done and done.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;raw fiesta salad&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;6 leaves romaine lettuce&lt;/li&gt;
&lt;li&gt;3 tbsp cilantro&lt;em&gt; (estimate)&lt;/em&gt;&lt;/li&gt;
&lt;li&gt;1/2 cup cherry tomatoes &lt;em&gt;(estimate)&lt;/em&gt;&lt;/li&gt;
&lt;li&gt;3 tbsp onion &lt;em&gt;(estimate)&lt;/em&gt;&lt;/li&gt;
&lt;li&gt;1/2 corn on the cob&lt;/li&gt;
&lt;li&gt;1/2 an avocado&lt;/li&gt;
&lt;li&gt;lime juice&lt;/li&gt;
&lt;li&gt;dash of salt&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;layer all the ingredients except for the avocado, lime juice and salt. in a separate bowl place the 1/2 avocado (sliced into chunks), squeeze half a lime and sprinkle with salt. then mash and mix. lastly, plop right on top. i added a couple more cherries and some remaining corn and onion. the avocado makes this salad. in my opinion. i easily could have eaten just that.&lt;/p&gt;
&lt;p&gt;in fact. i took the other half of the avocado, leftover onion, corn and 1/2 a lime and mixed it up. i think it’ll be a good snack tomorrow. the lime juice helps keep the avocado (basically an simple version of guacamole) from turning brown.&lt;/p&gt;
&lt;p&gt;mmm… delicious dinner. and a delicious snack for tomorrow. &lt;p&gt;had an amazing dinner. hopefully the picture isn’t deceiving. i think it looks delicious, personally. ha!&lt;/p&gt;

&lt;p&gt;&lt;span&gt;&lt;strong&gt;raw tuna salad recipe&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;2 cups sunflower seeds (soaked for at least two hours)&lt;/li&gt;
&lt;li&gt;1 tablespoon (or a bit more) dulse (seaweed) (make sure to wet your dulse first with the lemon juice or apple cider vinegar)&lt;/li&gt;
&lt;li&gt;1 clove garlic&lt;/li&gt;
&lt;li&gt; 1 teaspoon lemon juice&lt;/li&gt;
&lt;li&gt;1 teaspoon apple cider vinegar&lt;/li&gt;
&lt;li&gt;1 teaspoon thyme&lt;/li&gt;
&lt;li&gt;1/2 teaspoon sea salt&lt;strong&gt;&lt;br/&gt;&lt;/strong&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;em&gt;add in…&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt; chopped celery&lt;/li&gt;
&lt;li&gt;chopped onions&lt;/li&gt;
&lt;li&gt;chopped parsley&lt;/li&gt;
&lt;li&gt;raw pickles&lt;/li&gt;
&lt;li&gt;chopped apples&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;1. soak the nuts. rinse them well and discard all water.&lt;br/&gt; 2. process all of the &lt;em&gt;paste&lt;/em&gt; ingredients in a food processor on  high until the mixture resembles a very smooth paste. you should not see  any nut bits at all. you may need to stop and start and get in there  with a spatula.&lt;br/&gt; 3. eat right away or refrigerate to eat later. i prefer to keep the pate  separate and I don’t add any chunks (onions, celery, etc) until I’m  ready to eat.&lt;br/&gt; 4. when you’re ready to eat, serve your portion in a bowl. then add some  chopped onions, parsley, raw pickles or apples to suit your taste.&lt;br/&gt; 5. enjoy on &lt;a href="http://therawtarian.com/basic-raw-cracker-recipe/"&gt;crackers&lt;/a&gt;, on top of a salad, in a nori roll, or more…&lt;/p&gt;

&lt;p&gt;i made a couple small adjustments. only 1/4 tsp salt. then i sprinkled some salt and pepper on top. unfortunately i didn’t have any raw pickles ready. next time i think that’ll add a nice touch. i also only used about 1 1/2 cups sunflower seeds and it still made A TON! be prepared for leftovers. &lt;/p&gt;

&lt;p&gt;so. today. today was a great day! i pushed through my tired time. which is daily between 4pm-6pm. instead of taking a nap. i ran! and then i ate a fabulous raw dinner.&lt;/p&gt;
&lt;p&gt;new challenge. eat raw for 30 days. today is day 2. my plan is to go for the full 30 days. it&amp;#8217;s going to be a challenge. especially since the 4th of july is right around the corner. it&amp;#8217;s already tough enough being a pescatarian. i&amp;#8217;m going to bring some snacks. and try to think of an entree that every one might like.&lt;/p&gt;
&lt;p&gt;yesterday i made an amazing &amp;#8220;alfredo sacue&amp;#8221;. AMAZING with sea kelp noodles and some raw carrots. then a great lunch today for dippin veggies. might be a good one. i&amp;#8217;m also planning on making a &amp;#8220;tuna wrap&amp;#8221;. i need to be better about taking pictures. one. so i can share. two. because i love taking pictures of beautiful food!&lt;/p&gt;

&lt;p&gt;• 2 cups unsoaked cashews&lt;br/&gt; • 1/2 cup pine nuts (or just use more cashews if you don’t have pine nuts)&lt;br/&gt; • 1 tablespoon lemon juice&lt;br/&gt; • 3 cloves garlic&lt;br/&gt; • 1&amp;#160;1/2 cups water&lt;br/&gt; • 1 teaspoon thyme spice&lt;br/&gt; • 1 teaspoon sea salt&lt;/p&gt;
&lt;p&gt;throw it all in the blender and blend ’til it gets alfredoey! it’ll  get really nice and creamy, so keep blending… and you’re done!&lt;/p&gt;

&lt;p&gt;this last week i have been 100% off the healthy/working out wagon. and now. i am feeling the negative repercussions. not only do i just feel like &amp;#8216;blah&amp;#8217;. chubby. etc. i&amp;#8217;ve lost all my energy. ugh.&lt;/p&gt;
&lt;p&gt;all i can think of are excuses. and that&amp;#8217;s just even more frustrating. i&amp;#8217;ve been avoiding updating. because then i have to realize and acknowledge my laziness.&lt;/p&gt;
&lt;p&gt;i&amp;#8217;ve got 8 weeks until my 10k and 13 weeks until my half marathon. let the count down begin. this is definitely more than enough time to train and have extremely successful runs.&lt;/p&gt;

&lt;p&gt;&lt;span&gt;&lt;strong&gt;jicama dill salad&lt;/strong&gt;&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;span&gt;dressing&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;&lt;span&gt;1 cup cashews, soaked overnight, rinsed and drained&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1/2 cup water&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;3 tablespoons cider vinegar&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;2 teaspoons dried mustard&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;2 teaspoons lemon juice&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;salt and pepper&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1 teaspoon diced garlic (dried)&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;4 teaspoons fresh dill, chopped&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;span&gt;1. place all ingredients in high-speed blender. blend until smooth.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;*note: this will make  a little over a cup of dressing. you will not need the whole amount for the recipe.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;span&gt;salad&lt;/span&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;&lt;span&gt;6 cups jicama, cubed (about 1 large jicama)&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1 cup scallions, sliced&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;2 cup celery&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;&lt;span&gt;1/2 to 2/3 cup dill dressing&lt;/span&gt;&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;span&gt;1. toss together: jicama, scallions, celery&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2. mix in 1/2 to 2/3 cup dressing (to taste).&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;3. top with more fresh dill if desired.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;*serves 4-6&lt;/span&gt;&lt;/p&gt;
